Lavender Simple Syrup:
1 cup water
¾ cup sugar
2 tbsp dried lavender
To make one cocktail:
1.5 oz Ogham Craft Spirits Pot Still Gin
1.5 oz fresh lemon juice
1.5 oz lavender simple syrup
Prepare your lavender simple syrup by combining water and sugar in a pan over medium heat until all the sugar has dissolved. Once simmering, remove the sugar syrup from the heat, add in the dried lavender and stir. Let the lavender steep in the syrup for about 10 minutes to infuse flavour, then strain.
Fill a cocktail shaker about ¾ full with ice. Add your fresh lemon juice, lavender syrup, and gin. Shake vigorously until the shaker frosts up.
Strain the cocktail into a chilled coupe and enjoy!
