Ginger Collins


Ginger syrup:

1 part peeled and sliced ginger root
1 part sugar
1 part water

To make one cocktail:

1.5 oz Ogham Craft Spirits Pot Still Gin
2 oz ginger syrup
1 oz fresh lemon juice
1 top with club soda


Combine ginger, sugar, and water in a small saucepan over medium heat. Bring to a boil, then reduce to a simmer for 5-8 minutes until the mixture takes on an amber hue. 

Shake ingredients (not club soda) over ice and strain into a glass filled with ice. Top with club soda. Garnish with lemon, enjoy!
